I did get one of the Jaycar / Silicon_Chip kits a while back but wasn't that impressed with it. I had better results using an ARC welder to zap a NICAD pack in a cordless drill. Don't forget the difference in Octane rating. I believe the US uses MON as opposed to Australia & (possibly) NZ that use RON or they use Rating# = (RON + MON)/2 This explanes why some service stations have "crap" fuel while still meeting the required rating number. As Peter's 92 MON is...

I don't think the Ford Modular v8 would be a good base unless you choose the 4.6L version from the US. The 5.4L found in the Falcons has a long stroke which results in a very high piston speed. Great looking manifold & throttlebodies.
What size injectors are you using?

I was considering doing something similar but ended up buying a Holley/Weiand Stelth-Ram manifold. I might have to modify or manufacture a new plenum to get it to fit under the bonnet though.

I have had a bit of fun over the years using the engine simulator in the "NIRA Drags" game. Bigger is not always better with the many settings.
